Fish Tacos on Nantucket Island

For the 4th of July weekend, I was invited to stay with a friend on Nantucket Island, a beautiful oasis off the coast of Massachusetts. If you've never been, it's truly paradise. Quaint cobblestone streets, cute shops, stunning hydrangeas everywhere, fantastic restaurants, miles of pristine bike paths and some of the most beautiful beaches you'll ever set your bare feet on. And, of course, the absolute perfect place to grill.


Fish Tacos jumped out at me as the perfect Get Out and Grill recipe to try here. We went to the fish market and bought a beautiful piece of fresh-off-the-boat Nantucket Cod. When you have fish this fresh, it's easy to make a delicious meal. I tweaked the recipe a bit because my friend and I both LOVE guacamole and wanted to incorporate it into the tacos. Making your own guacamole is super simple. Just mash up 2 ripe avocados (you know they're ripe when they give a little when you squeeze them). Add 1 clove minced garlic, some fresh squeezed lime juice, salt and you're good to go!


 

Also, you can't have a cookout in New England without corn. So we boiled some corn and cut the kernels off one of the ears so we could use it for the tacos. We ate the other ears the nice, messy way - with lots of butter and salt! Our other addition was to include a little fresh chopped tomato because they're in season!


I can't tell you how DELICIOUS these Fish Tacos tasted. The fish was perfectly flaky, the guacamole went so well with all the other ingredients. And it was so colorful and pretty. All the farmer's market colors in one taco.



I have one tip about cooking fish on the grill. Because cod is a flaky fish, I wanted to make sure I didn't lose it through the grill slats. So I grilled the fish directly on the grill on one side and then when I flipped it over, I flipped it onto a piece of tin foil so that the pieces that fell off would not fall through the grill. Something you might want to consider.


So I have 2 recommendations - 1. Go to Nantucket - it's the best way to embrace summer and recharge your batter; and 2. Make these Fish Tacos - a great meal you can actually make all year round (just bake or broil the fish instead of grilling it).

that looks so yummy... I have some left over fish from last night and that's what I'll make tonight! I suggest adding some cilantro to the guacamole, I know some people don't like it :) but it does add that extra freshness.
